We produce this wine thanks to the oldest vinification method of our tradition here in Valdobbiadene. Our ancestors had tools which only permitted this wine-making method: wine starts the fermentation in a barrel and starts a new fermentation once it is bottled.
This process gives the wine a dry, sapid and full-bodied flavour which makes it a unique product of its kind. What is immediately apparent are “fondi”, some natural spent yeast sediments in the bottom of the bottle which are evidence of it being natural and, consequently, of the ancient vinification method.
100% Glera grapes
Straw yellow colour with greenish reflections, clear at the beginning and then cloudy as the natural yeast cells settle.
Serving temperature: 6-8°, keep in a cool place, away from light.
Ideal with all types of cold cuts, especially the ones that come from the territory, like cured meats, seasonal mushrooms, polenta and game.
